Tuscan-Style New York Strip with Arugula-Artichoke Salad

This past Friday, I decided to try this Cooking Light recipe: Tuscan-Style New York Strip with Arugula-Artichoke Salad.

What is not to love? Potatoes, steak, artichokes and arugula! Golden! Related to Italy in any way? Wonderful! And the perfect Friday night dinner. Still healthy, but it feels decadent. Maybe it is just the steak? Plus...we had arugula in the fridge that was going to go bad.

The recipe called for the steak to marinade for four hours. Well, four hours before dinner I am at work. So I prepared the marinade and put the steak in the fridge that morning. Our steak marinaded for over eight hours. It was still delicious in the end. Or perhaps delicious because of that?

I boiled the potatoes in water with a bay leaf while the steak was being brought back to room temperature.

 
While the potatoes were cooling I prepared the artichokes and lemon. Once the potatoes were no longer burning my fingers -- I sliced them as well.


I decided to briefly grill the artichokes, for some extra flavor.


I maintained the hearts and the soft portions after they were grilled, and prepared the arugula and red onion salad tossed in a lemon vinaigrette.


Next up: grilling the steak and potatoes. I grilled them on a grill pan as opposed to outside on the grill (it just seemed easier). The steak took about five minutes a side and the potatoes slightly longer.


The hubby and I both prefer crisp to our potatoes, which is why I opted to grill them much longer than the recipe called for. The crispier the better!


After letting the steak rest for about five minutes I sliced the steak.


Perfectly done, at least for hubby and I!

Finally it is all put together: arugula salad, with potatoes, steak and grilled lemon with shaved Parmesan.




This was a great Friday night dinner. Aside from the four eight hours of marinading the steak, it is fairly quick to put together. I would definitely make this again. Really, when it comes down to it, it is just steak, potatoes and salad. You can't go wrong with that!
