Although healthy eating is important, sometimes it is fun to splurge. Hubby and I were invited to a dessert potluck. After sifting through many recipes, I decided to combine two and make chocolate cupcakes with a fresh raspberry frosting.
I used this chocolate cupcake recipe and this frosting recipe. They turned out pretty amazing, it is hard to beat the chocolate and berry combo. My hubby also made super-yummy Hello Dolly's.
Although I tend to stray from recipes when cooking, I stick pretty strictly to recipes when I bake. This chocolate cupcake recipe turned out really good. Fluffy and moist, and the added coffee gave it a nice depth of flavor.
While the cupcakes were baking and cooling I worked on the frosting. I had a beautiful bowl of fresh raspberries, that I had to stop my self from eating.
I put the raspberries through the food processor and then pulled them through a small strainer. This worked perfectly to get out all those pesky little seeds. In the end there was just a super smooth, bright red liquid.
I didn't have any raspberry extract, so I just added all of the berry puree. I did sample the frosting multiple times, to be certain I wasn't overdoing it with the berry.
In the end the cupcakes turned out super cute and very tasty!
Hubby's dessert turned out pretty well too, in fact it was the most popular dessert at the potluck!
