New Year - New Start

Hello again. It has been awhile. With the new year I want to try to revitalize this blog. It was fun, a great creative outlet, and challenged me to learn to use my camera (and balance a camera with my knee, while stirring a dish and attempting to focus the shot). I may play with what I post a bit. It became overwhelming to try to cook so many new meals each week. So just to jump start the process, I wanted to get something written down; unfortunately, it is without pictures of my own. I will say it was inspired by my lunch, which was something I never would have thought of putting together, so at least it is about cooking/food. Without further introduction, here it is, the first post of 2013.

One of my New Year's Resolutions (aside from challenging myself creatively, hence the resurrection of the blog) is to be healthier. Eat cleaner. Exercise more. Really the types of resolutions that more than half the country makes, which is why it is much harder to get an open treadmill this time of the year at the gym (a few weeks ago every single treadmill was just sitting, unused, when I walked in at 5:30pm).

To start out 2013 right, I made us salmon burgers last night. I am very in love with these pre-made salmon burgers you find at the fish department of HEB. "Fiesta Salmon Burgers" to be precise. Jalapenos, cheese, corn, salmon. Topped with some avocado, lettuce, onion and sriracha (because I love the stuff) -- it is the fastest, tastiest dinner I make us. But that is unrelated to today's lunch.

When we left my mother-in-laws at Christmas, she sent us on our way with four beautiful ruby red grapefruits (among other treats). I discovered that I love these little (well, slightly large) gems last Christmas when she sent them home with us. And to think, all this time I thought I hated grapefruit!

So today, again, following my attempt at clean eating (healthy eating, portion control, all that jazz) I had a fairly tasty salad at lunch that was based on this one. Here is Muchin with Muchkin's amazing picture of the salad that she made:


I did not take a picture of my salad today...mainly because I was at work, in the communal kitchen, and it would be strange to whip out my camera (which I don't take to work with me anyways). But maybe tomorrow...

I basically had this same salad, minus the sprouts (because they were out at HEB -- absolutely no sprouts of any kind to be found) and added a mix of spinach and spring greens. It was pretty tasty. I really liked the addition of the pumpkin seeds. Such a nice nutty crunch! And don't get me started on the goat cheese!!

It felt decadent, but was still extremely healthy and fairly low calorie. About 450 for the salad according to myfitnesspal.com (which I have used on and off for awhile now). A little high for a lunch, but not completely horrid. I am also guessing that I overestimated the amount of goat cheese and pumpkin seeds I used because I forgot to measure them out (I know, bad me...does not hold to me portion control aspect of my resolutions).

Tonight, my favorite grapefruit recipe that I first posted about in this post! The Shrimp, Grapefruit and Avocado salad! That is quite a bit of grapefruit in one day, but what can I say....it is so good!!!!
