Man oh man...

This past weekend was a little out of control. Talk about falling off the wagon! Between having friends over Friday, a great night with the hubbie on Saturday and a "baby shower" (more like party) on Sunday there was a bit of overindulgence in food and drink. But it was fun. And sometimes you just have to have those weekends....even if your body feels a bit differently and your favorite jeans are a bit tight by Monday.

This week I am trying to cleanse a bit. Healthy meals throughout and no alcohol...give my body what it needs to recover! I started with a run this morning, and plan to workout the rest of the mornings this week. Actually I started with a Salmon and Veggies in Parchment Paper recipe last night. It turned out ok. I had a lot of trouble with the parchment paper - getting it to stay in a nice, tight package. Generally speaking, this was not my favorite fish recipe.

I will be trying two more new recipes this week:

First up - Tempeh and Green Bean Stir-Fry with Peanut Sauce

I am subbing firm tofu for tempeh, because it was easier to pick up at my local grocer. I think I will like this recipe a lot - lucky for the hubby, he is out of town and will not be subjected to my vegetarian whims this week. Both new recipes I picked to try are veggie.

Next up - Paella with Soy Chorizo and Edamame

I am following the recipe on this one - except the parsley. I try to omit things like parsley (or dill) when a recipe only calls for a small amount. It feels wasteful, because I always end up throwing the rest away. I do have some cilantro in the fridge - maybe I will toss that on there, because cilantro is yummy on everything!
