Originally I had planned to use deli-turkey and whip up a salad of some sort, but as we were sitting on our back patio (like we often do) watching the last of the weekend sun slip away -- it suddenly seemed like a good night for grilling. So I pulled some chicken wings out of the freezer and reworked my dinner plan.
First I made a marinade for the defrosting chicken. I mixed together some vinegar, extra virgin olive oil, lime juice, cumin, salt and cayenne - along with some diced red onion, cilantro and jalapeno. I threw all this into the Ziplock bag containing the chicken and left it running under some cold water.
I then whipped up a fairly similar vinaigrette to use on the salad: vinegar, extra virgin olive oil, lime juice, cumin, cayenne, cilantro and diced red onion.
Finally, I threw together some fresh salad greens (from our Farmhouse box), diced avocado, plum tomatoes and diced red bell pepper.
We then enjoyed the nice Texas night while grilling up the chicken, which we cut up and mixed together with the salad and vinaigrette. And voila - a delicious and healthy Sunday night dinner!
How 'bout them pictures? I have finally started taking my own pictures (instead of stealing them). I am especially proud of this recipe, not just because I have pictures to prove I really do cook; but it was my own recipe. In fact, I created it on the spot and, I will admit, I kinda impressed myself. I have even better pictures of tonight's dinner (I am already improving at the picture-taking), but you will have to wait for those until tomorrow! I can't believe it took me so long to start with the pictures -- it combines so many of my favorite things: cooking, food and photography!
