First I whipped up the pesto in the food processor -- this was a true, basic pesto: basil, pine nuts, Parmesan cheese and olive oil. Simple and delicious.
Next I browned some chicken in a pan with some light olive oil, sprinkled with crushed red pepper and Italian seasonings for taste.
Next I threw in some sunburst cherry tomatoes, again from our Farmhouse box.
I put some whole wheat linguine on to boil and sliced up a tomato and mozzarella for the Caprese salad. I laid them ontop a bed of basil and sprinkled balsamic vinegar on top of the salad.
Once the pasta was cooked I tossed the pasta, chicken and pesto together in a large bowl.
It was a delicious dinner. The wine was spectacular. Definitely worth the wait, and the packing it took to get three bottles of wine into our already-full luggage at the end of the trip (not to mention waiting eagerly for our bags at the baggage claim, worried wine would be dripping from the bottom). A very romantic dinner for two.
