Both Mr. X and I were off work today - so it made today kinda like a Sunday! In fact, it was very much like a Sunday. Mainly we just did laundry, got groceries and did some stuff around the house. We are both struggling with allergies, so it was nice to take it easy today.
I decided to make a roast chicken for dinner tonight. I had bought a fresh, local chicken at the farmer's market over the weekend. I also got some butternut squash, carrots and turnips. So my market purchses dictated the menu: roast chicken with butternut squash and carrots, and a turnip parsnip gratin based on this recipe I found on The Pioneer Woman's blog - one of my favorite blogs.
Oddly, despite my love of cooking and trying a variety of recipes, I have never done a simple roasted chicken. I stuffed the chicken with lemons, garlic, sage and rosemary and rubbed a similar mixture on and under the skin.
It turned out meh. The flavor was good, but the chicken is better on the rotisserie. I will have to read more about roasting and try again sometime.
I managed to stay gluten-free all weekend. And just completed a week. I don't feel any benefits yet...my allergies are particularly brutal and I had some strange pain in my hand today. No idea if that was just a weird pain, or arthritis related. But that is always the question I ask.
I am actually getting some blood work done Wednesday - partly to monitor my blood now that I am off the medications, and also just some regular tests about my cholesterol, thyroid, and such. It is a nice coincidence to have these baseline tests so close to the start of this experiment.
