Lazy Sunday

 Happy Sunday!!

Mr. X  and I love bacon on Sunday mornings.
This morning I also made gluten free biscuits for breakfast. 
Usually Sundays are not my favorite day, with one exception: when Monday is a holiday!! Normally on Sunday I am running errands, getting groceries, prepping food for the week, doing laundry, and generally preparing for the work week; and, the entire day I am counting down the hours until the weekend ends. But not on a Sunday when Monday is a holiday! Then Sunday is the best day!

Last night was very successful with the gluten-free pizza crusts and girls night. I had originally planned to make the crust recipe in the cookbook Against all Grain
, but I realized I was missing a bunch of key ingredients and didn't feel like going to the store. Luckily I had bought a package of Bob's Red Mill Gluten Free Pizza Crust mix as my backup. The crust turned out really well.

For my toppings, I cooked up some bacon pieces with garlic and shallots, and put that ontop of some fresh mozzarella slices. Then I tossed some torn kake in the bacon grease and layered that over the garlic/bacon mixture. The kale crisped up a bit in the oven offering a great texture, and the flavors were amazing. It was delicious! In fact, it was so delicious that I ate half the pizza before I remembered to take a picture!


My friend Joanna used the other gluten-free crust. She used tomato sauce, the bacon/garlic mixture, shredded mozzarella,  and maybe some other things...I was busy making my own pizza while she was making hers!


 Overall,  pizza and movie night was a big hit!

Then this morning I planned to make me and Mr. X breakfast: bacon and eggs. I decided to also make Paleo Honey Biscuits from Against all Grain just for a little something different.

They were pretty easy to pull together, and had a touch of sweetness to them. I would actually make the biscuits smaller next time because they were very dense.


Obviously I thought they were good though, if I am thinking about a next time.

Today is panning out to be a pretty lazy day. We are hiding from the cedar, watching movies and doing house chores. I love me a good lazy Sunday! Especially when I don't have to work the next day!

(I know its a bad habit, but we don't usually end up having lunch on Sunday. Our breakfast is later in the morning and bigger than most days...so we don't really get hungry until dinner.)
