Tonight I made us "Greek Gyro Pasta with Lamb Meatballs" from Against all Grain. First off, let me rave about this cookbook. If you are considering doing gluten-free, paleo or any iteration; or, if you just want to incorporate more of these types of meals into your diet: GET THIS COOKBOOK!
So now that is done. Let me talk about this amazing meal. First off, it isn't pasta. It is zucchini!!!! I purchase this new little kitchen gadget called a spiral slicer. It is super easy to use, almost like using a pencil sharpener and creates long strands that represent noodles. I bought the Briefton brand on Amazon for only $23.You make long zucchini "noodles" and toss them with some vinegrette. There are many other recipes that use this technique that I am excited to try.
Now, I am not crazy, and Mr. X will try pretty much anything I make, but I knew this was pushing the line. So I made him some normal noodles as well, which I tossed with lemon juice, olive oil and oregano. But I thought the zucchini was delicious. Paired with the meatballs and tzatziki sauce, it really did almost taste like a gyro. Or just general yuminess.
I would totally recommend this recipe!!
Aside from our amazingly yummy dinner (and I have leftovers for lunch tomorrow!) there isn't much to report, per se. I had some blood work done this morning, but it will be a few days to a week before I hear any results from the tests. Otherwise, I still feel generally the same. I think. I will admit this experiment has been easier than I expected to maintain. So maybe I am feeling some benefit and not completely realizing it. I definitely have the desire to see it through at least to day 30. And I am certainly learning some new things to cook!
