Another winner!

I can't remember if I mentioned, after the long walk with my friend on Tuesday, I wanted to make something really quick and easy. So I made chickpea tacos (which are also delicious), and saved the new salmon recipe I wanted to try for tonight. And it was another winner from Against all Grain, probably no surprise there.

Tonight I made a Honey-Lime Salmon Tostada. The tostadas are obviously homemade and gluten-free, made with almond flour, lime juice and cilantro and baked in the oven. The salmon is marinaded in a honey-lime sauce, and was delicious.

I topped ours with red cabbage, avocado, cilantro, and a green salsa that I buy fresh from HEB. I thought it was really delicious, and a different way to make salmon - and I am aways looking for new ways to make salmon since we eat it about once a week. Regardless of whether I stay gluten-free, some of these recipes will definitely remain in my cooking rotation.



My coworkers, and friends, have been very curious as to how the diet has been going. Honestly, the diet has been fairly easy to maintain. It has also really tested me in the kitchen, which I love, by making me work with some new ingredients that I am not used to working with: things such as almond flour and coconut oil. In that way, I have no doubt, regardless of what happens, that some of these recipes and ingredients will be incorporated into our daily/general life. 

BUT....so far I have experienced very few benefits or health differences. Granted, this is only day ten, but I assumed with all that I have researched and read that I would feel some difference by now. Overall, my weight hasn't changed, my digestion seems to be the same, I had a spot of eczema last night, and, oddly, I had some very random hand pains over the past couple days. The latter has been slight, especially compared to what I experienced four years ago, but it brings back up the same question as to why I experience this pain: Is this just a regular old thing, or is it Palandromic Rheumatoid? OH! And let's not even get into the allergies, which are just as bad as always. 

All that said, I still want to see this through at least the 30 days. It does help me to generally eat healthier, and it certainly keeps me away from things like brownies, cookies, and other baked goods that seem to make a fairly regular appearance in our office. So I am not giving up...but I am still skeptical.
