One girl - one goal: to live a healthier life.

This includes eating more locally produced food; cooking culinary delights at home; and living life to it's fullest.

Healthy living does not have to be boring and tasteless...

Whoopsie!

I obviously fell a little behind with blogging this weekend. I did stay on the gluten-free wagon though! This weekend was tougher than previous days/weekends. Particularly Sunday morning - I was making our typical weekend bacon and eggs, with toast for Mr. X...and MAN did I want some toast! I resisted, just had eggs and bacon along with some orange juice, strawberries and blackberries. I have a feeling this next weekend will be a struggle too, we are supposed to go to our favorite Italian restaurant with Mr. X's family. The pasta there is AMAZING!

I think one of the reason this is getting harder to maintain is that I am almost half-way through my experiment, and I have seen little to no health benefits. My allergies are still going nuts (thanks, cedar), I still seem to be having occasional eczema, and I have seen little weight loss (although I have not measured myself - which is often the better determination than the scale). It was easier to stay strong when I was curious what benefits I would see, now that I have seen none it is harder to keep it up. But I plan to make it the full thirty days!

Aside from the toast temptation, this weekend wasn't too bad. Friday was a Texas ice day (which means no work/school!!!), so there was a lot of movie watching followed by a fire in the fireplace and pizza delivery. Our favorite pizza delivery place now has a gluten-free crust, which I thought was pretty tasty! Saturday night Mr. X and I had tickets to a concert - so we went out to dinner before the show. I tried my best to eat gluten-free when eating out, and I think I did ok. Then last night we grilled steaks, and had those along with potatoes.

Tonight is a spicy shrimp dish, and tomorrow I plan to do a crock pot chicken chili! It turns out to be perfect timing with the cold winter weather that is heading our way!
